However I always stuggled with store-bought granolas because they were filled with sugar, made with refined grains and were not nutritious at all. So I started making my own. They have the same crunchiness, nuttiness but they are also so much healthier and flavoursome! And this one is my absolute favourite. It has chocolate, it has coffee, it is perfect."

ingredients
- 2 cups rolled oats
- 1/4 cup shredded coconut
- 1/2 cup hazelnuts (or other nuts), toasted
- 1/2 cup pumpkin seeds
- 2 tablespoons chia seeds
- 1 shot espresso
- 1/2 cup cocoa powder
- 1 tablespoon coconut oil, melted
- 1 tablespoon honey
- 3 ounces dark chocolate chips, or chopped dark chocolate
Method
Step 1
Preheat your oven to 285°F.
Step 2
Mix the oats, coconut, seeds and nuts in a bowl.
Step 3
Combine the melted coconut oil with honey, cocoa, salt and espresso. Mix until you get a smooth paste.
Step 4
Pour the mixture over the oats and mix. Make sure that whole mixture is well coated. Transfer granola onto a baking sheet and spread it out evenly. Bake for 20 minutes, then stir it, toss some chocolate chips and return to the oven for another 8 minutes. It should be golden brown and feel dry to touch.
Step 5
Once done, leave it to cool down completely (don’t take it out as it will crisp up at it cools), then add the remaining chocolate.
