This time I want to share with you a recipe for kidney bean brownies. They are so perfectly gooey, rich in flavour but also quite healthy. I mean they have beans in them. This means we can have two slices instead of one right? 😉"

ingredients
- 1 can rinsed and drained kidney beans
- 8 pited medjool dates
- 3 tablespoons raw cocoa powder
- 3 tablespoons soy milk
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 ounces oat flour
- 1 tablespoon runny peanut butter or tahini
- 1 handful of chopped hazelnuts
Method
Step 1
Risne and drain kidney beans. Add them to a food processor with pitted dates. Add soy milk, cocoa, salt, baking powder and cinnamon and mix until smooth. Add oat flour (or blended rolled oats) and peanut butter and mix everything until well combined. Add chopped hazelnuts. The mass will be sticky and should form into a dough but if you feel that you will not be able to spread it, add a splash of milk.
Step 2
Pour the mass into a baking dish. Bake in a pre-heated to 180oC oven for 20 minutes until the edges get slightly brown.
Step 3
Remove the brownies from the oven once they cool. As a topping you can use melted dark chocolate and additional nuts.
