ingredients

  • 2 tablesp Coconut Flour
  • 2 tablespoon Almond Flour
  • 2 tablesp Tapioca Flour
  • 1 tablespoon Buckwheat Flour
  • 1/2 teaspoo Baking Soda
  • 1 teaspoo Lemon Juice
  • 1 1/2 cup Almond Milk
  • To Taste Salt
  • 100 grams Blueberries

Method

  • Step 1

    Mix in a bowl the coconut flour, almond flour, tapioca flour and the buckwheat flour.

  • Step 2

    Add a pinch of salt. Add 1 cup and half of warm water or dairy-free milk and mix all together. Make sure you reach a liquid consistency and adjust it by adding water/dairy-free milk.

  • Step 3

    Add baking soda and lemon juice (ideally freshly squeezed) in a coffee cup and once it is completely mixed pour it into the bowl.

  • Step 4

    Mix the batter in the bowl and add the blueberries.

  • Step 5

    Heat up a pan and add half tea spoon of extra-virgin coconut oil to avoid the batter from sticking.

  • Step 6

    Pour the batter in the pan following a circular shape. Cook each pancake for 2-3 mins each side.

  • Step 7

    Serve the the pancakes with your favorite toppings.
