ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon instant yeast (or 1/2 package active dry yeast)
- 3 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon fine sea salt
- 1/2 cup vegan butter, softened
- 1/2 cup any plant based milk
- Powdered sugar, to top
Method
Step 1
In a stand mixer fitted with the whisk attachment, add the flour, yeast, sugar, salt and cinnamon.
Step 2
Add softened butter and milk. Using the hook attachment, knead until just combined. Cover and let rest for 5 minutes.
Step 3
Continue kneading on medium until smooth (about 10 minutes). Cover and let rise in a warm place (ideally 35C degrees) for 1-1 1/2 hours, or until doubled in size.
Step 4
Preheat a waffle iron. Lightly grease with vegan butter or oil. Divide dough into small balls (about 1 teaspoon each) and bake according to the machine instructions.
Step 5
Top with powder sugar and enjoy warm!
