Egg Curry With Red Chilli, Cumin & Cardamom
The eggs were delicately dropped and simmered in a spicy Coconut-Tamarind Curry. A dollop of this on plain rice with papad (crispy fried crackers) is just heaven :). I made Mom's version of South Indian Shakshuka for our dinner tonight. Happy Wednesday!
