Chocolate Ganache

  • 1 cup heavy cream
  • 14 ounces chopped dark chocolate
  • 4 tablespoons unsalted butter
  • Tart crust, of choice


  • Step 1

    Put the chocolate into a large bowl. Heat the heavy cream until steaming. Pour over the chocolate and cover. Let stand until chocolate is 80% melted, then stir.

  • Step 2

    Whisk in butter and pour into crust. Chill until firm.
