A Note from Feedfeed

To balance out the bitter flavor of radicchio, are paired with little gem salad and a wonderfully herby green goddess dressing. It's excellent for serving with your favorite protein.

ingredients

For the Green Goddess Dressing

  • 1 handful of fresh mint
  • 1 handful of fresh basil
  • 1 handful of fresh dill
  • 1 cup Greek yogurt
  • 1 shallot, roughly chopped
  • 1 lemon, juiced and zested
  • Salt, as needed
  • Black pepper, to taste

For the Salad

  • Sweet potato, roasted
  • Little gem lettuce
  • Radicchio

Method

  • Step 1

    Place first six ingredients in the blender and blend until combined. Then slowly start to drizzle in the olive oil. If the dressing is still too thick, you can add a bit more oil to loosen it up. Season with salt and pepper.

  • Step 2

    Serve with chicories.
