ingredients
- 4 large potatoes
- 2 tablespoons butter
- Freshly chopped coriander
- Parmesan, as desired
- Neutral oil for frying
- 3 tablespoons corn flour
- 3 minced garlic cloves
Method
Step 1
Slice the potatoes and put them in an ice bath for 10 minutes. Drain and dry them, then boil for 4 minutes.
Step 2
Coat the fries in corn starch, then fry in hot oil until golden brown.
Step 3
Once the fries are removed from the hot oil, toss them with the minced garlic and parmesan. Serve hot.
