You won't believe how addicting these are!
1/2 cup granulated sugar
3 tablespoons unsalted butter
1/4 cup heavy cream
1/4 teaspoon salt
Heat the sugar over medium heat, stirring occasionally until it's all melted. Be careful not to burn it!
As soon as it's melted, add the butter (it'll bubble up, so be careful) and stir until it's combined.
Stir in heavy cream, allow the mixture to boil for about a minute.
Remove from heat, stir in salt, and set aside.
1 bag pretzel rods (use the unbroken rods)
1 bag Ghirardelli white chocolate melting wafers
1 recipe caramel sauce (posted above)
5 pieces Farmer John Cinnamon Sugar Rubbed Bacon, cooked and chopped very finely
Put parchment paper or nonstick foil on a large cookie sheet (this is where you'll set the pretzels to dry). Melt the white chocolate (follow the directions on the bag) and transfer to a tall drinking glass.
Working one pretzel at a time, dip into the white chocolate and shake off the excess. Sprinkle the finely chopped cooked bacon onto the white chocolate, drizzle with caramel sauce and set onto the covered cookie sheet to set.
Repeat with all the rods. You can put them in the fridge to get them to set faster.

I love Chick-fil-A all of the time but I've noticed the only times I'm *reaaaallly* craving it is always on Sundays (is it just me or does this happen to other people too?) So, when I saw the recipe for this month's #rainydaybitescookbookclub and that the post date was a Sunday I knew just what I wanted to do! Copycat Chick-fil-A sandwiches with crispy chicken from @kenjilopezalt's The Food Lab.

Does anyone remember the good old days of semi homemade with Sandra Lee on food network? I'm especially referring to her extreme love of vodka in anything and adding 2 shots aka 16 to any drink she made. Well, this is kind of like that, but minus the vodka (sorry). These semi-homemade chicken enchiladas use rotisserie chicken and store-bought enchilada sauce to make your life (and your dish washing) much easier. Recipe in the comments! ALSO - if you're a prep ahead kinda person, these work great if you assemble them (do everything but bake them), cover in foil and store in the fridge. Just take them out, bake as directed and dinner's on the table in 25 minutes!

I love pretty much all things involving copious amounts of heavy cream and cheese, but Cajun chicken pasta is one of my very favorites. Super creamy sauce, flavorful chicken and it's on your table in like, 20 minutes. Plus it's SUPER healthy (that was maybe a lie). What else do you want from life?
