Shakshuka With Whipped Polenta, Jalapeno & Feta
Made shakshuka for Sunday brunch. Added saffron to my favorite recipe by @smittenkitchen

Brunch, Breakfast Whipped Polenta Recipe:
To make the whipped polenta use a 1 to 5 ratio I.e 1 cup of fine polenta to 5 cups water or your preferred stock. Bring stock to a boil and then stir in the polenta and reduce heat to med low and stir constantly for about 20 min (don't let it burn on the bottom ~ this is why the stirring is important). Season with salt, pepper and to whip it remove from heat and place in a vitamix, blender or food processor and blend until smooth.
