ingredients

  • 8 slices of white bread
  • 1/4 cup ghee, divided
  • 1/4 cup cashews and raisins (2 tablespoons of each), plus more for garnish
  • 1 1/2 cups granulated sugar
  • 1 1/4 cup water
  • 2 cardamom pods, crushed
  • 1/2 cup milk
  • Orange food color, as needed
  • 3 tablespoons mawa (khoya)

Method

  • Step 1

Cut each slice of white bread into 4 small squares.

  • Step 2

In a Tramontina Kadai, heat 2 to 3 tablespoons of ghee over medium heat.

  • Step 3

Fry the bread squares in batches until golden brown, adding more ghee as needed. Once fried, set the bread aside on a plate.

  • Step 4

In the same Kadai, add another 2 to 3 tablespoons of ghee.

  • Step 5

Fry the cashews until they turn light golden. Add the raisins and continue frying until they puff up and turn golden.

  • Step 6

To the fried dry fruits, add the sugar and water. Stir in the crushed cardamom pods and bring the mixture to a boil.

  • Step 7

Allow it to cook until the sugar dissolves completely, creating a light syrup.

  • Step 8

Gently stir the fried bread squares into the syrup mixture. Mix well to ensure the bread absorbs the syrup evenly.

  • Step 9

Pour in the milk and add a pinch of orange food color. Continue to cook, stirring occasionally, until the mixture thickens and the bread becomes soft, with just a little moisture remaining.

  • Step 10

Stir in the mawa (khoya) and cook for an additional minute to combine all the flavors.

  • Step 11

Once fully combined, remove the halwa from heat.

  • Step 12

Serve it warm or chilled, garnished with extra roasted cashews and raisins if desired.
