ingredients

  • 1 1/4 cup all-purpose flour
  • 1 1/2 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup buttermilk, at room temperature
  • 4 tablespoon melted unsalted butter, plus extra for the griddle
  • 3/4 teaspoon vanilla extract
  • 1/2 cup strawberries
  • 1/2 cup blueberries
  • 1 large banana, cut into slices
  • 1/2 cup raspberries
  • maple syrup, optional

Method

  • Step 1

    Heat a griddle on medium high.

  • Step 2

    In a small bowl, sift the flour, sugar, baking powder and salt.

  • Step 3

    In a large bowl whisk together the eggs, buttermilk, melted butter, and vanilla.

  • Step 4

    Slowly incorporate the dry ingredients with the wet ingredients whisking until no lumps remain.

  • Step 5

    Add a small pat of butter to the hot griddle, once it melts add a thin layer of batter onto the griddle.

  • Step 6

    When you start seeing bubbles on top, flip the pancake and immediately press it flat.

  • Step 7

    Remove from the griddle and place the pancake into a taco holder so it retains the shape of a taco.

  • Step 8

    Fill them with Nutella and garnish with fresh fruit.

  • Step 9

    Drizzle with maple syrup and dust it with powdered sugar.
