For the Hasselback Potatoes:

  • 4 medium russet potatoes, scrubbed clean
  • 1 - 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 2/3 cup prepared pizza sauce (above)
  • 1 1/2 cups (200 grams) shredded, low-fat mozzarella cheese
  • 1/4 cup (20 grams) turkey pepperoni slices, diced

ingredients

To Serve:

  • Remaining pizza sauce, warmed

Method

Air Fryer Instructions:

  • Step 1

Preheat air fryer to 425°F. Line the air fryer rack with parchment paper (optional).

  • Step 2

Make the sauce: In a saucepan over medium heat, combine Tuttorosso Hand Crushed Tomatoes with olive oil and seasonings. Simmer for about 5 minutes, stirring occasionally.

  • Step 3

Prep the potatoes: Slice each potato crosswise into thin slices (~1/8 inch apart), being careful not to cut all the way through. Poke a few holes in the underside with a fork.

  • Step 4

Drizzle potatoes with olive oil and sprinkle with the seasoning mix.

  • Step 5

Air fry for 45–50 minutes, or until potatoes are tender and the tops are golden.

  • Step 6

Gently fan open the slices and spoon the pizza sauce between each layer. Stuff with mozzarella and pepperoni.

  • Step 7

Return to the air fryer for another 10–15 minutes, or until the cheese is melted and bubbly.

  • Step 8

Serve hot with extra pizza sauce for dipping.

Oven Instructions (Optional):

  • Step 1

Preheat oven to 400°F. Line a baking sheet with parchment paper.

  • Step 2

Prepare sauce and potatoes as above.

  • Step 3

    Bake potatoes for 35–40 minutes.

  • Step 4

Remove, fan open the slices, and stuff with sauce, cheese, and pepperoni.

  • Step 5

Return to the oven for 10–15 minutes, until golden and bubbly.

  • Step 6

Garnish with extra basil and oregano flakes if desired, and serve with extra sauce.
