  • 2 large bananas, mashed
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 2 cups rolled oats
  • 1/2 cup whey protein powder
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 cup mini chocolate chips

  • 1 1/2 bananas, sliced `
  • 3 tablespoons peanut butter
  • 3 tablespoons mini chocolate chips
  • 3/4 cup Greek yogurt

Method

  • Step 1

    Preheat the oven to 375°F. Lightly grease or line an 8x8-inch baking dish.

  • Step 2

    In a large bowl, mash the bananas. Whisk in milk, peanut butter, maple syrup, eggs, and vanilla extract.

  • Step 3

    Stir in oats, protein powder, salt, cinnamon, and baking powder. Fold in mini chocolate chips.

  • Step 4

    Pour mixture into the prepared baking dish. Bake for 35–40 minutes, or until golden and set in the center.

  • Step 5

    Let cool slightly before slicing. Store leftovers in the fridge. When ready to serve, reheat and top with more peanut butter, sliced banana, chocolate chips, and Greek yogurt.
