- 12 ounces cooked bacon, chopped
- 1 large yellow onion, diced
- 2 tablespoons unsalted butter, divided
- 1 (15 ounce) can sweet corn, drained
- 2 tablespoons chili crisp
- 6 to 8 slices Swiss cheese
- 3 to 4 Dave’s Killer Bread Sandwich Rolls Done Right
- 2 tablespoons mayonnaise
Method
Step 1
In a cast iron pan over medium heat, cook the bacon until almost crispy. Remove the bacon and leave about 4 tablespoons of bacon fat in the pan.
Step 2
Add the onion and cook in the bacon fat until caramelized. Set aside.
Step 3
Add 1 tablespoon of butter to the pan, then stir in the corn. Cook until lightly browned, about 5 minutes.
Step 4
Return the onions and bacon to the pan and stir in the chili crisp. Mix well.
Step 5
Lay the Swiss cheese over the mixture and cover the pan to melt the cheese.
Step 6
While the cheese melts, toast the sandwich rolls with the remaining tablespoon of butter.
Step 7
Spread mayonnaise on the toasted rolls, then load them up with the hot succotash mixture. Serve warm.
