ingredients
- 2 cups sugar
- 3/4 cup water
- 1 cup unsalted butter
- 1 vanilla bean pod, (or 1 tsp vanilla extract)
- 1 cup heavy cream
- 1 teaspoon salt
Method
Step 1
In a saucepan over medium heat, add the granulated sugar, water and stir until sugar has melted. Stop stirring and allow the sugar to cook until it reaches amber-color.
Step 2
Make sure to swirl the pan to distribute the sugar and ensure it is cooking evenly. Note: Be careful not to over cook the the caramel because it will turn very bitter.
Step 3
Carefully stir in 1 cup of heavy cream until fully combined. Add the salt, seeds of 1 vanilla bean pod ( or vanilla extract) and stir. You can taste the caramel and add additional salt to your liking.
Step 4
Set aside to cool before transferring to a container or jar. You can store it in the refrigerator for up to 1 month.
