ingredients

  • 200 gram Dark Chocolate
  • 70 gram Yolk
  • 50 gram Sugar
  • 100 milliliter Strong Coffee
  • 400 milliliter Double Cream
  • 4 tbsp Your Favourite Spirit – Rum or Brandy Recommended
  • 2 tbsp Golden Caster Sugar

Method

  • Step 1

    The chocolate should be broken into small chunks; tip it into a bowl with the alcohol and coffee. 250ml of the cream should be brought to a boil; once done, pour it over the chocolate mixture and stir until the mixture has melted and has a smooth texture.

  • Step 2

    The sugar and egg yolk should be beaten until the sugar dissolves. Take this and mix it with the chocolate mixture; following this, divide the mix into six and place in dome moulds. Leave in the refrigerator overnight to set.

  • Step 3

    Take out of the fridge and coat with melted milk chocolate; edible flower, micro herbs and raspberry sauce can be used to decorate the plate. A scoop of salted caramel ice cream can be added, while a marinated mix of fresh berries and hazelnut crunch can be sprinkled on top.
