ingredients
- 1 teaspoon coconut oil
- 1 red onion, diced
- Thumb of grated ginger
- 2 minced garlic cloves
- 1 teaspoon curry powder
- 1 teaspoon turmeric
- 1/2 teaspoon garam masala
- 3 curry leaves
- 1/2 teaspoon chilli powder
- 1/2 teaspoon ground coriander
- 400 grams finely chopped tinned tomatoes
- 1 jar/can chickpeas
- 400 millileters coconut milk
- 150 grams spinach
- Chilli oil, coriander seeds, lime, fresh coriander and red onion to serve
Method
Step 1
Sauté onion, ginger and garlic in coconut oil over a medium heat for a couple of minutes before adding in spices and toasted for a further minute
Step 2
Add in tomatoes and cook for a couple of minutes. Next stir in chickpeas and coconut milk
Step 3
Simmer for 15 minutes. Fold in the spinach and serve with fresh coriander, a squeeze of lime and a small amount of red onion. Enjoy over rice, with a naan or whatever your heart desires
