ingredients

  • Large bunch of spring onions
  • Approx 100g flour
  • 35 cornflour
  • 1 teaspoon paprika, chilli powder
  • 1 teaspoon chilli powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt and black pepper
  • 1 teaspoon chilli powder
  • 1 teaspoon ground cilantro
  • 250 millileters cold beer
  • Vegetable oil for need of shallow frying

Method

  • Step 1

    Trim the ends of spring onions and cut into thirds. In a bowl mix together flour, cornflour and seasonings.

  • Step 2

    Whisk in the beer to form a medium-thin batter (add more or less beer is needed).

  • Step 3

    Immediately coat the onions in the batter and fry in a pan of hot oil over a medium-high heat (the colder the batter the crispier the spring onions).

  • Step 4

    Make sure not to overcrowd the pan as this will lower the temperature of the oil. After a couple of minutes, once golden brown, remove onions from oil and drain on kitchen roll.

  • Step 5

    Serve with flakey salt and ground chili for a slight kick, enjoy with a nice cold beer.
