  • 1 cup leftover mashed potatoes
  • 2 eggs
  • 2 tablespoons shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Green onions, for garnish

Method

  • Step 1

    Preheat the oven to 375˚F.

  • Step 2

    Place the mashed potatoes in a small oven-safe skillet. Make two small wells in side the mashed potatoes.

  • Step 3

    Crack the eggs inside the wells. Add shredded cheese around the eggs and season with salt and pepper.

  • Step 4

    Bake until the cheese has melted, and the eggs are set to your liking, about 15-18 minutes.
