Sesame Ginger Kabocha Squash Soup
Of all the winter pumpkin, kabocha is really my favorite (okay, I do love delicata, butternut and classic pumpkin, too). A delicious preparation is a velvety and thick soup. Belly filling and heart warming, it hits the spot every time. This version features an Asian flavor profile which I find irresistible. Top with your favorite mushrooms, a dot of cream or a drizzle of sesame oil, sesame seeds and a few chili flakes. This is one to go on repeat.
