Hummus And Avocado Toast
Remembering this day last year when I joined #Veganuary and ate a plant-based diet for 31 days. I had some slip ups and found it much harder than I thought it would be...but I do love the reset that happens at this time of year. Breakfast in bed this morning is fully-loaded butter bean hummus on whole grain toast with avocado, tomato, spiced pepitas, cilantro & @weikitchen shallot oil. Happy 2015 everyone!
