"RECIPE: Broccoli and Cauliflower Jalapeño Cheddar Cheese Gratin INGREDIENTS: 1 medium head of cauliflower 1 medium head of broccoli 4 tbsp of butter 4 tbsp of flour 2 tsp spicy brown mustard 2 cups milk 1 1/2 cups of jalapeño cheddar cheese, shredded Salt, pepper, and cayenne pepper 1⃣ Preheat oven to 400F. Cut broccoli and cauliflower into florets and steam or parboil for about 5 minutes to soften. Drain if boiling to dry off the florets as much as possible. I find it easiest to steam in the microwave. 2⃣ In saucepan over medium heat, melt butter, add flour and cook for a minute to get rid of the raw flour taste. 3⃣ Add milk in a steady stream while stirring to create a smooth sauce and bring to a gentle simmer. The sauce should start thickening at this point. 4⃣ Add mustard and season with salt, black pepper and cayenne pepper if you want a little more heat. 5⃣ Add a total of 1 1/4 cup of cheese a handful at a time allowing cheese to melt before adding the next handful. Remove from heat. 6⃣ Arrange broccoli and cauliflower in a baking dish and pour cheese sauce over the top. Sprinkle with remaining cheese and bake at 400F for about 30 minutes until the cheese is bubbly and has browned on top. "
