ingredients

  • 2 tablespoons oil, divided
  • 2 cloves garlic, minced
  • 1/2 red onion, finely chopped
  • 3 mini bell peppers, chopped
  • 1 bag Cascadian Farms Powered by Plants Grains, Vegetables & Legumes
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1/2 tablespoon salt
  • 1/2 tablespoon ground black pepper
  • 1/2 large avocado, thinly sliced
  • 1/4 cup cilantro, finely chopped
  • cheese, shredded, optional, for serving
  • sour cream, optional, for serving

Method

  • Step 1

    Heat 1 tablespoon oil in a large skillet over medium heat. Add garlic, red onion and bell peppers. Cook for about 10 minutes until soft. Keep warm.

  • Step 2

    Heat remaining 1 tablespoon of oil in a cast iron pan over medium-low heat. Add grain blend. Cook for about 20 minutes, stirring occasionally. Season with chili, paprika, cumin, salt and pepper. Combine Cascadian Farms Powered by Plants Grains, Vegetables & Legumes blend.

  • Step 3

    Serve with avocado, cilantro, cheese and sour cream, if desired.

  • Step 4

    The mixture can also be stuffed into tortillas.
