Kimchi Quesadilla with Green Onion Pancakes

This quesadilla has a spicy asian twist. Instead of tortillas, we use two crispy green onion pancakes from Uncle Onion. Ooey gooey mix of cheddar and mozzarella, balanced by the spicy acidic kimchi.

ingredients
- 2 tablespoons gochujang
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 4 tablespoons water
- 2 tablespoons vegetable oil
- 2 Uncle Onion green onion pancakes
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded low moisture mozzarella
- 1/3 cup kimchi, chopped and drained
Method
Step 1
To make the dipping sauce, mix together gochujang, honey, sesame oil, and water in a small bowl.
Step 2
In a large pan, heat vegetable oil over medium heat. Add in one Uncle Onion green onion pancake and cook both sides until golden brown and crispy (around 4 minutes per side). Set aside and add more oil to the pan. Add in the second Uncle Onion green onion pancake. Cook one side until golden brown and flip.
Step 3
While the other side is frying, add a layer of cheddar, mozzarella, chopped kimchi, and then the remaining cheese. Add the other green onion pancake on top and press down firmly. Drizzle a few drops of water to the side of the pan and cover to steam. Once the cheese has melted and the pancake is golden on the bottom, transfer to a cutting board.
Step 4
Cut the quesadilla into triangles and enjoy with the gochujang dipping sauce.
