Homemade Caesar And Blue Cheese Dressing
My one confession as a home cook is that I've never quite mastered homemade Caesar dressing. Mine always comes out too one-note, i.e., too lemony. So this time, by adding blue cheese and an extra anchovy fillet, I've managed that rich, creamy, umamied savour that pairs gorgeously with romaine hearts. Not to mention that grilling your lettuce like this somehow turns it meatier and more substantial.
