This homemade candied ginger is both soothing and snackable. It’s made with just three ingredients and yields a spicy-sweet treat plus a bonus batch of ginger syrup—perfect for cocktails, tea, or drizzling over pancakes.

ingredients

  • 1/2 pound fresh ginger, peeled and sliced into ¼-inch thick pieces
  • 1 cup granulated sugar, plus more for coating
  • Water

Method

  • Step 1

    Place sliced ginger in a saucepan and add enough water to cover. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.

  • Step 2

    Reserve 1 cup of the ginger cooking liquid and discard the rest.

  • Step 3

    Return the ginger and reserved liquid to the pot. Add 1 cup sugar and stir to dissolve. Simmer uncovered for another 30 minutes, until the ginger is translucent and the syrup has thickened slightly.

  • Step 4

    Strain out the ginger pieces (save the syrup for later use).

  • Step 5

    Spread the ginger on a wire rack and let cool for 15 to 30 minutes, until still sticky but no longer wet.

  • Step 6

    Toss ginger pieces in additional sugar to coat.

  • Step 7

    Store candied ginger in an airtight container for up to 2 weeks. Store syrup separately in the fridge.
