ingredients

  • 24 ounce bag fingerling potatoes
  • 3/4 cup panko breadcrumbs
  • 1/3 cup parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 cup grated parmesan, plus more for topping
  • 2 tablespoons mayonaise

Method

  • Step 1

    Preheat oven to 450 °F.

  • Step 2

    Bring a large pot of water to a boil, and cook potatoes until tender. Remove and let dry about 10-15 minutes. Cut potatoes in half and set aside.

  • Step 3

    In a bowl, mix together panko, parsley, salt, garlic powder, pepper, paprika, and grated parmesan.

  • Step 4

    Coat cooled potatoes in mayo, and toss in panko mix until evenly coated.

  • Step 5

    Bake for 8-10 minutes until golden and crispy.
