For the Dressing:

  • 10 sprigs cilantro
  • 1/3 cup vegan sour cream
  • 3 tablespoons pickled jalapeno
  • 2 tablespoons fresh lime juice
  • 1 tablespoon raw honey
  • 2 teaspoons fresh lemon juice
  • 2 cloves garlic
  • 1 teaspoon shallots, chopped
  • pinch of salt
  • pinch of black pepper

Method

  • Step 1

    Heat oil in a 10-inch nonstick skillet over medium-high heat. Carefully add Cascadian Farm Frozen Organic Hearty Blend with Brown Rice, Black Beans, Corn & Red Bell Pepper blend. Reduce heat to medium. Cover; cook for 6 to 9 minutes, stirring occasionally, until thoroughly cooked.

  • Step 2

    While rice is cooking, make the dressing. Add all ingredients to the blender, blend until thoroughly combined. Set aside.

  • Step 3

    Once rice is cooked, top with avocado, cilantro, tomato, red onion, pickled red onions and jalapeño.

  • Step 4

    Drizzle with dressing. Remaining dressing can be stored in a jar and refrigerated.
