ingredients

  • 3 tablespoons butter
  • 1 large diced onion
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 6 cloves of garlic, diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 cup cherry tomatoes, cut in half
  • 1 cup chicken broth
  • 2 (10 oz) can Tomato Love Mild Diced Tomatoes + Green Chilies
  • 8 oz tomato sauce
  • 1 cup white long grain rice
  • 1 lbs boneless, skinless chicken breast, cubed
  • 1/2 lbs andouille sausage, sliced `
  • 1 lbs cooked Shrimp, peeled & deveined
  • Fresh Chives, for garnish⠀

Method

  • Step 1

    Heat butter in a large pan over medium heat. Add onion, pepper, celery, salt, pepper, and dry mustard. Cook for 7 minutes, until soft.

  • Step 2

    Add the garlic and cook for 2 more minutes.

  • Step 3

    Add chicken and cook for about 5 minutes. Then add sausage and cook for another 2 minutes.

  • Step 4

    Add tomatoes, sauce, chicken broth, seasoning, and herbs. Cook for 3 minutes.

  • Step 5

    Stir in white rice. Bring to a boil, then reduce heat to a simmer. Cover and let simmer for 30 minutes, or until the rice is cooked and tender.

  • Step 6

    Lastly, fold in shrimp and cook for 5 minutes until done.

  • Step 7

    Serve Jambalaya in bowls and garnish with fresh chives.
