ingredients

  • 1 pork loin
  • 3/4 cup dried cranberries
  • 1/2 cup goat cheese
  • 1/4 cup chopped pecans
  • 2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon pumpkin spice
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage

Method

  • Step 1

    1. Preheat the oven to 450 degrees. 2. Butterfly the pork so you can stuff it. 3. Add the cranberries then goat cheese & pecans.

  • Step 2

    4. Wrap up and secure with kitchen twine. 5. Place pork on a greased cookie sheet and rub the spice mixture onto the pork.

  • Step 3

    6. Bake for 40 minutes or until the internal temperature reaches at least 145 degrees. 7. Optional: all cranberry topping with fresh thyme & sage. *Cranberry topping: (1/2 cup dried cranberries mixed with 2 tbsp water & 3 tbsp honey) or you can use cranberry sauce or jam
