Stir Fry:
- 1 bag Cascadian Farms Powered By Plants Frozen Broccoli, Carrots, Chickpeas, and Farro Mix
- 2 tablespoons olive oil
- 2 tablespoons coconut aminos
- 1/3 cup nutritional yeast
ingredients
Maple Tahini Dressing:
- 1/3 cup tahini
- 2 tablespoons maple syrup
- 1 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fennel fronds or dill, chopped
Method
Step 1
Add Cascadian Farms Powered By Plants Frozen Broccoli, Carrots, Chickpeas, and Farro Mix mix to a large saute pan. Add olive oil, coconut aminos, and nutritional yeast. Stir until everything is well combined.
Step 2
Cover the pan and cook over medium heat for 12-14 minutes. Once vegetables are fully thawed, remove from heat.
Step 3
Meanwhile, make the maple tahini dressing. Whisk the tahini, maple syrup, lemon juice, mustard, salt, black pepper, and fennel fronds until smooth and creamy.
Step 4
Add the dressing to the farro mix. Stir until well combined.
Step 5
Transfer the stir fry to serving bowls and garnish with pumpkin seeds and fennel fronds. Enjoy!
