They say a watched kettle never boils, but please, please don't tell me a watched jar never pickles because I could stare at these beauties all day! Swiss chard stems leftover from last night's dinner are getting #spicy pickled today. These beauties are high in micronutrients (vitamins and minerals), phytochemicals (health ambassadors), and antioxidants (crime fighters against free radicals) so please ? don't throw them away. Pickle them!

4.16.17 You know you're Hispanic when you get asked to bring guacamole to Easter.🐇🥑😂 ° ° Easter Guacamole 😉 (serves 10-12): 6 avocados 2 limes (juiced) 3/4 tsp pink salt 1 tsp cumin 1 1/2 tsp cayenne powder (usually do just one tsp and one chopped serrano pepper, but my mom stole all my serranos to make salsa😂) 1/2 red onion, finely chopped 1 medium sized tomato, chopped Cilantro, chopped about 2 TBsp 2 garlic cloves, minced ° In a large bowl place the scooped avocado & lime juice (reserve about a 1 TBsp for later), toss to coat. Using a fork (I like to have some chunks, if smoother guac desired use masher) add the salt, cumin, and cayenne & mix. Then fold in the onions, tomatoes🍅, cilantro, & garlic. Add reserved lime juice to top to prevent browning. Let sit for 1 hour & then mix & serve. Happy Easter! 4.15.17 Was craving a little somethin' somethin' sweet tonight annnnnd since I just happened💁‍♀️to have made peanut butter chia pudding yesterday... I came up with these little layered desserts. And aren't these @wishfarms organic strawberries the most gorgeous things ya ever did see?! 🍓😍 ° ° Peanut butter chia pudding (base layer): 7-8 pitted dried dates, chopped 1/2 cup chia seeds 2 cups @califiafarms unsweetened toasted coconut almond milk 2 tablespoons @crazyrichardspb peanut butter powder Cinnamon as desired ° Directions: Place chopped dates in medium bowl & stir in chia seeds & milk. Chill about 4 hours (or overnight), stirring intermittently a couple times in the first hour to prevent clumps. Pour mixture into blender, add peanut butter powder, cinnamon and blend until smooth (use extra milk if needed & your choice sweetener if extra sweetness desired... I personally just sweeten it up by eating with fruit😉). 4.12.17 I have a confession: when people tell me "veggies just don't fill me up"... I don't believe them🙈, I just think they need to try harder😉. This easy green bean salad was my post workout meal of choice after running 4 miles immediately followed by a 45 min leg workout & lemme tell ya it did not disappoint!👊Try it out for yourself!⬇️ ° ° Crispy green bean salad🥗: Steam green beans until crisp-tender, ~4-5 min. Remove from heat & place in ice water for ~4-5 min to stop the cooking process. Drain beans & pat dry. Add to bowl & toss with your favorite balsamic vinaigrette dressing. Top with tomatoes (I used mini San marzano tomatoes...which are heavenly👼), shredded parmesan cheese, and maple-bacon tempeh then sprinkle with black pepper & cayenne🔥. 3.22.17 Happy Waffle Wednesday! These protein packed, whole grain beauties are just the thing you need to get you through the week! I topped mine with @fourthandheart vanilla ghee (pretty sure I'm addicted)🤤, raw chopped almonds, cinnamon, pure maple syrup, & sweet raspberries.😋 ° ° Ingredients you probably already have🙌 WAFFLES: ▫️2 c cottage cheese▫️2 c old fashioned rolled oats ▫️6 large eggs▫️1 TBsp vanilla (umm... I like vanilla🙋‍♀️) ▫️pinch of salt (optional) ▫️Heavy dashes of cinnamon aka I didn't measure 😉 Heat waffle iron to med-high heat. Place all ingredients in a blender & mix🔄until smooth. Pour in waffle iron (optional: drop in a handful of frozen blueberries at this time) & cook until golden brown.
