ingredients

Base

  • 1 cup oat flour
  • 1/4 cup vanilla protein powder
  • 4 tablespoons maple syrup
  • 6 tablespoons coconut oil
  • Handful of chocolate chips
  • Big pinch of salt
  • 1-2 tbsp water (only if needed)

Method

  • Step 1

    Mix all ingredients together until you have a crumbly cookie dough texture. press into a lined tray and set aside in the fridge.

Caramel

  • 1 1/2 cups dates
  • 2 tablespoons peanut butter
  • 2 tablespoons coconut oil
  • 5 tablespoons maple syrup
  • Pinch of salt

  • Step 1

    Add ingredients to a food processor and blend until you have a smooth, thick caramel. Spread over the base layer and set aside.

  • Step 2

    Melt around 80g dark chocolate with 1 tsp coconut oil and pour over the caramel layer. add any decoration/toppings you’d like and put in the freezer until fully set. slice and enjoy.
