ingredients

  • 1/4 cup sesame seeds, toasted
  • 2 bananas, medium
  • 2 tablespoons maple syrup
  • 2 teaspoons chia seeds, ground
  • 1/4 cup soy milk
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon vanilla extract
  • 1 cup oat flour
  • 2/3 cup almond flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Method

  • Step 1

    Preheat oven to 350°F. Line with paper cups or grease a muffin pan and set aside.

  • Step 2

    In the bowl of a mortar and pestle, grind sesame seeds until it has a flour-like consistency. Set aside.

  • Step 3

    In a large bowl, mash bananas with a fork until very few lumps remain. Add in maple syrup, ground chia seeds, soy milk, vinegar, and vanilla extract. Stir until well combined.

  • Step 4

    In a medium bowl, whisk together oat flour, almond flour, ground sesame seeds, baking powder, and baking soda until combined.

  • Step 5

    Add flour mixture into wet ingredients and stir to combine. Divide batter evenly among muffin cups, filling almost to the top. Bake for 25-27 minutes, or until a toothpick inserted in the center comes out clean. Let muffins cool for 5 minutes in the pan, then transfer to a cooling rack and let them cool completely.
