Make your own [vegan] mayo at home! This allows you to control what ingredients are added and you can adjust the flavor to your liking. Soaking cashews in water and then blending together helps make the creamy base for this mayo. Add nutritional yeast, lemon juice, and vinegar for that tangy mayo flavor.

ingredients

  • 1 cup raw cashews, soaked in boiled water for at least 10 minutes
  • 1/2 cup water
  • 2 teaspoons lemon juice
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dijon mustard
  • 1 teaspoon nutritional yeast
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon sugar

Method

  • Step 1

    Add all ingredients to a blender and blend until smooth. Add extra water if needed to help blend, but try not to add too much or your mayo will be too thin.

  • Step 2

    Transfer to an airtight jar, cover, and store in the fridge. It will thicken slightly after a few hours in the fridge.
