Pitaya powder gives these vegan cheesecakes its deep pink color. This recipe makes 3 perfectly creamy no bake vegan cheesecakes.

ingredients

Base

  • 3 tablespoons Oat flour
  • 2 tablespoons ground walnuts
  • 1 tablespoon dates paste
  • 25 millileters plant based milk

Method

  • Step 1

    Mix everything together and spread it evenly in your cupcake molds Place it in the fridge to set while you make the filling

  • 55 grams cashews soaked in water
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut cream
  • 2 tablespoons maple syrup
  • 1 teaspoon Pitaya powder

  • Step 1

    Blend until everything is well combined. Take the cupcakes out of the fridge, add the filling and place them in the fridge for min 2hours or overnight before serving

  • Step 2

    For topping i am using some homemade jam made with raspberry & strawberry with dates paste as sweetener.
