Cacao Mint Mousse
This after eight dessert is the perfect weekend treat to make for personal indulgence or to enjoy with family and friends. I’ve used @QuakerOatsUK to make this cacao mint mousse and it’s completely dairy and refined sugar free! This recipe is best prepared a day or two before consumption but can be eaten on the spot for the less patient amongst us. (For one serving) Soak 1 sachet of @QuakerOatsUk oat so simple original oats and 1 tbsp of chia seeds for 30-60 minutes. Once your oats have soaked add in 1/4 tsp peppermint extract, 2 tbsp of cacao and 1-2 tbsp maple syrup (start with 1 tbsp and add more to taste) then blend all the ingredients until smooth. Pour into a glass jar and leave to set for 1-2 nights. Serve with fresh mint and raw cacao swirls (normal chocolate would work too), sit back, relax and savour the moment. #FeelingFibrant #ad #dessert #healthydessert

Starting the day as s l o w l y as humanly possible (I'm still in bed, 1 glass of water and 1 coffee down..). I'm planning a 35 minute HIIT workout (inspo from @thewholesomehunter always) and will s l o w l y y y y make my way to the study. I've had a manic couple days and needed the extra sleep, a couple of 4am starts (yuck) took their toll and waking up late today felt epic. Sometimes you've gotta listen to your body and say 'sleep the hell in' ??? #preachit

This morning I couldn't help but capture Lilly settling into our new home. I've got one week until my exams start and, as always, the niggling doubt in the back of my mind is questioning how ready and capable I am. However, for the first time in years I feel calm. Not because I'm more prepared than usual (I'm not) but I've been reflecting on what a teacher once said to me; 'exams aren't the be all and end all'. At the time I took this comment to heart and passed it off for him not understanding the importance of my situation. On reflection, he was right. Things work out, exams don't define you and they certainly aren't always an accurate representation of intelligence. What will be will be and sometimes, doing 'ok' or even 'not great' is totally fine. Life is more than grades and letters. Experience, application and kindness, for me, shows more than a two or three hour performance. #monday
This morning I made my Dad a belated birthday breakfast before his cross country race (good luck Dad!). I'm not normally one to sing the graces of jam and toast. But.. my Dad's marmalade atop toasted rye (and not that dark cardboard variety) is truly quite sublime. It's more sweet and sour candied peel than gelatinous gloops of sugar (no hating). Texture is just important to me. #sunday
