ingredients
- 1 tbsp olive oil
- 2 cloves minced garlic
- 1 diced medium onion
- 1 diced red bell pepper
- 1 seeded and chopped jalapeno
- 1 cup white rice
- 1/2 teaspoon cumin
- 7 ounces tomato sauce
- 1 cup chicken broth
- 2 tbsp cilantro
- as needed salt
Method
Step 1
Heat oil in a large saucepan over medium-high heat. Add the onions, garlic, bell pepper, and jalapeno and sauté for 1-2 minutes, or until the onions become translucent. Add the rice and sauté until it's a light golden brown, about another 2 minutes.
Step 2
Add in the cumin, salt, tomato sauce and chicken broth and stir. Bring the mixture to a boil, then reduce the heat to low and cover, simmering until the cover rice is cooked all the way through, about 15 minutes. Note: do not lift the lid during this time!
Step 3
Remove the rice from the heat and sprinkle with the chopped cilantro.
