Sticky Apple and Hazelnut Upside Down Cake

- 150 gram Butter
- 150 gram Light Brown Sugar
- 3 large Eggs
- 1 1/2 teaspoon Mixed Spice
- 150 gram Self Raising Flour
- 1 Apple
- Handful chopped Hazelnuts
- 3 tbsp Tinned Caramel
Method
Step 1
First, preheat the oven to 180c. Then line the base of a 15cm cake tin with baking paper.
Step 2
Next, in a mixing bowl, beat together the butter and sugar until creamy. Add and mix in the eggs one at a time. Then add the flour and mixed spice. Fold together to make a cake batter, ensuring it is all mixed together well.
Step 3
To prepare the apple, slice it in half and remove the tough centre. With one half, peel the apple and dice into small pieces. With the other half, slice into thin apple slices.
Step 4
With the apple pieces, fold them through the cake batter with half of the hazelnuts.
Step 5
With the apple slices, lay them around the cake tin onto of the baking paper. Then drizzle the caramel and spread it carefully across the apples. Sprinkle with the remaining half of the hazelnuts.
Step 6
Tip in the cake batter and level out using a spoon. Bake in the oven for 45-50 minutes.
Step 7
Enjoy warm from the oven for a delicious pudding, delicious with ice cream! Or, serve cold with a lovely cup of tea.
