ingredients

  • 2 eggs
  • 1 ounce chorizo
  • 1 tablespoon sour cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chilli flakes
  • 1/2 tablespoon butter

Method

  • Step 1

    Heat a frying pan over a low/medium heat. Add the butter and allow to melt.

  • Step 2

    Crack and whisk the eggs in a bowl.

  • Step 3

    Pour the eggs into the pan and rotate the pan so the eggs cover the base. As the edges start to cook, using a spatula, drag the cooked egg into the centre. Once the edges are in the centre, pick up the pan and rotate so the uncooked egg runs out to the edges and repeat.

  • Step 4

    Place your toast into the toaster.

  • Step 5

    Dice the chorizo.

  • Step 6

    Once the egg has cooked, remove and place to one side. Then turn up the heat of the frying pan and add the chorizo to fry.

  • Step 7

    Once the toast is done, plate up and add the eggs, top with the chorizo pieces and add a dollop of sour cream.
