Eggplant or Aubergine as I call is one of the most versatile produce. You can grill, sauté, throw it in a pasta sauce, slice it up and bake it. I mean, come on! It's a true Mediterranean staple, my Italian grandfather cooked with it all the time, Eggplant Parm (what I call Melanzane) was a family favorite. The eggplant has the power to soak up so much flavor but able to keep it 'meaty' texture. Truly magical!
