This hearty salad is packed with protein making it the perfect meal to enjoy for lunch or dinner. Arugula, pomegranate seeds, walnuts, beets, apples and chickpeas are all tossed together with balsamic dressing. Swap the salmon for chicken or leave it out and make it vegan.

ingredients

  • 1 cup brown rice
  • 1/2 cup arugula
  • 1/2 cup chopped beets
  • 15 ounce can cannellini beans
  • 1/2 cup green apple
  • 1/2 cup pomegranate seeds
  • 1/4 cup walnuts
  • 1/4 cup feta
  • Filet of salmon

ingredients

Balsamic Dressing

  • 1/2 cup olive oil
  • 1 tablespoons balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple syrup
  • Salt & pepper to taste

Method

  • Step 1

    Cook your rice according to instructions on your package. chop apple however you would like then add all ingredients to a bowl.

  • Step 2

    Preheat your oven to 375F and add your salmon filet to a pan. brush olive oil on top along with salt, pepper, and garlic.

  • Step 3

    Drizzle your dressing over top and serve!
