- 150 g oyter mushrooms

Marinade and coating
- 180 milliliter non-dairy milk
- 10 g turmeric
- 5 g curry powder
- 1/2 teaspoons salt
- dash of black pepper
- 180 g cornstarch
- 1 teaspoon salt

Assorted vegetables
- 1/2 red onion, sliced
- 2 garlic cloves, minced
- 1 red chili, sliced
- 50 g long beans, cut into matchsticks
- 50 g carrot, cut into matchsticks
- 1/2 teaspoon turmeric
- salt to taste
Method
Step 1
In a bowl, combine all the ingredients for the marinade. Marinade the mushrooms for 1 hour.
Step 2
In a bowl, prepare the dry batter. Coat all the marinated mushrooms in the cornstarch. Place back into the marinade and coat once more in the cornstarch.
Step 3
In a large pan over medium heat with oil, pan-fry mushrooms until crispy and golden brown.
Step 4
In the same pan, cook the onions, garlic and red chili in oil until fragrant. Toss in the vegetables, more turmeric, salt and cook for a few minutes, depending on how soft you like your vegetables.
Step 5
Once the vegetables are cooked, stir in fried mushrooms and turn off the heat. Serve straightaway with rice. Enjoy!
