ingredients
- 3 big Tomatoes
- 1 Red bell pepper
- 2 Scotch bonnet pepper
- 2 Onions
- 6 Chicken Thighs
- 10 sprigs Thyme
- 2 cloves Garlic
- 1 teaspoon grated Ginger
- Salt
- 1/2 cup smooth Peanut Butter
- 1 cups sliced Spinach
Method
Step 1
Blend the peppers, tomatoes and one onion. Keep to one side as you will come back to this later.
Step 2
Cook the chicken with the remaining onion, garlic, ginger, half of the thyme sprigs and salt. Make sure the cooking liquid covers the chicken. The length of time you cook the chicken for depends on the type of chicken you are cooking.
Step 3
When the chicken is cooked, remove from the stock and strain the stock before pouring back into the pot. Add the chicken and pour in the blended pepper, tomatoes and onion mix. Add the remaining thyme.
Step 4
Allow to cook for 10 mins. Then mix the peanut butter with a little hot water to make for easy mixing with the content of the pan. Add into the pan. Make it slightly more runny than you prefer and it should thicken. You can make it as thin or thick as you want by adjusting the quantity of water.
Step 5
Allow to cook for around 10 mins .Add the spinach and stir in properly. Remove from heat and serve with your favorite starch foods like rice, pasta, fufu, Tuwo, Pounded yam etc.
