ingredients

  • 1 Red Onion
  • 3 medium Tomatoes
  • 1 cups fresh Coriander
  • 1/4 medium Cucumber
  • 1 Avocado
  • 1 Chilli
  • 1 Lemon
  • 1 tablespoons Extra virgin olive oil
  • Salt

Method

  • Step 1

    Squeeze the lemon and keep the juice aside.

  • Step 2

    Chop the onions and soak in cold water for 10 mins to reduce the bite. Drain in a colander.

  • Step 3

    Wash and chop the tomatoes, coriander, cucumber, avocado and chilli. Mix in a bowl with the onions.

  • Step 4

    Add the lemon juice, extra virgin olive oil and some salt. Mix well and serve.
