  • 1 1/2 cups strongly brewed coffee
  • 8 ounces mascarpone cheese
  • 2 tablespoons granulated sugar
  • 1/2 cup Biscoff cookie butter
  • 2 cups heavy cream
  • 1 tablespoon vanilla extract
  • Pinch of salt
  • Biscoff cookies, for layering
  • Melted cookie butter and crushed Biscoff cookies, for topping

Method

  • Step 1

    Brew a strong batch of coffee or espresso and allow it to cool completely.

  • Step 2

    In a mixing bowl, beat the mascarpone, cookie butter, sugar, vanilla, and salt until smooth. Add the heavy cream and beat until thick and fluffy.

  • Step 3

    Quickly dip each Biscoff cookie into the cooled coffee and layer them in a baking dish. Spread a layer of the mascarpone mixture on top. Repeat this process for three layers, finishing with the cream on top.

  • Step 4

    Drizzle melted cookie butter over the top and sprinkle crushed Biscoff cookies around the edges.
