  • 3 1/4 cups (400 grams) strong white bread flour
  • 1 tablespoon white or cane sugar
  • 1 teaspoon sea salt
  • 1 1/2 teaspoons instant yeast
  • 1 1/3 cups water
  • 1 tablespoon olive oil

  • 3 tablespoons cinnamon
  • 1/4 cup (50 grams) coconut sugar
  • 1/4 cup (50 grams) brown sugar
  • 1/4 cup melted vegan butter

  • 1 cup powdered sugar
  • Non-dairy milk, adjusted to desired drizzle consistency

Method

  • Step 1

    Mix the dough: In a large bowl, mix together the bread flour, sugar, sea salt, instant yeast, water, and olive oil until well combined. Cover the bowl with cling film and let the dough rest for 30 minutes.

  • Step 2

    After the initial rest, fold the edges of the dough into the center to add air. Repeat this all the way around the dough, then cover again and let it rest for another 30 minutes.

  • Step 3

    Perform coil folds by lifting the dough and folding it under itself for about 1 minute. Cover and let the dough rest for another 30 minutes.

  • Step 4

    Repeat the coil folds, then cover the dough and refrigerate overnight or for about 8 hours.

  • Step 5

    The next day, remove the dough from the refrigerator and let it sit at room temperature for about 2 hours. Then, transfer the dough to a well-oiled dish and let it rest for 1 hour.

  • Step 6

    In a small bowl, melt the vegan butter and mix in the coconut sugar, brown sugar, and cinnamon until combined.

  • Step 7

    Once the dough has risen, spread the cinnamon mixture over the top. Dimple the dough with your fingers like you would for regular focaccia, ensuring the cinnamon topping mixes into the dough.

  • Step 8

    Preheat the oven to 400°F. Bake the focaccia for 28-30 minutes, or until the top is browned. Don't worry if it browns quickly — that’s the cinnamon sugar caramelizing!

  • Step 9

    Remove the focaccia from the oven and top it with a drizzle of icing glaze made from powdered sugar and non-dairy milk.

    Slice the focaccia and enjoy warm.
