ingredients
- 1 sweet potato
- 4 tablespoons olive oil
- 6 garlic cloves
- 1 handful of fresh basil
- Salt and pepper

Dip
- 1 cup vegan feta
- 1/2 teaspoon pepper
- 1 garlic clove
- Plant-based milk to thin
Method
Step 1
Set oven to 160C / 350F.
Step 2
Wash your sweet potato. Keep the skin on and chop into cubes.
Step 3
Boil the cubes until tender.
Step 4
Cover the bottom of a glass with parchment paper and smash the sweet potato cubes on a baking tray.
Step 5
Finely chop up garlic and basil.
Step 6
Mix together garlic, basil, olive oil, salt and pepper in a jar and brush on the smashed sweet potatoes. Bake until crispy, approximately 30-50 min.
Step 7
Make the dip by blending the ingredients and serve!
