Raw Vanilla Cheesecake Topped With Pistachios, Strawberries And Mint
Base: 1 cup pitted dates, soaked for 1 hour and drained 1 cup walnuts ½ cup coconut ½ cup almonds 3 rinds of sea salt Cheese: 2 cups raw cashews soaked for 2 hours and drained 4 tablespoons coconut oil Juice of 1 lemon ½ sweetener (maple syrup, rice malt) ½ cup coconut milk 2 tsp vanilla extract Decoration 1 punnet fresh strawberries sliced lengthways 3 sprigs of mint 1/3 cup pistachios What to do 1. Add all “base” ingredients to a food processor and processor until all is combined. 2. Line a baking \dish with baking paper and pour base mixture in. Flatten out into a smooth layer. 3. To make the cheese blend all “cheese” ingredients in a food processor for 3-5 minutes or until creamy. 4. Pour “cheese” over base and smooth out with a hot spoon. Place in the freezer for 4 hours to set. 5. Remove cake from freezer half an hour before serving. Decorate with chopped pistachios, fresh strawberries and mint leaves.
